You will be responsible for the supervision, motivation, training and scheduling of the kitchen Dietary staff, ensuring that our senior residents have nourishing and attractive meals in keeping with their specific diets and conforming to all NYS Department of Health regulations.
Creates menu selections for residents in accordance with New York State Department of Health guidelines.
Offers a good variety of alternate choices at each meal.
Provides clear descriptions for the residents.
Prepares proper quantity of food for resident and employee meals.
Operates a variety of kitchen utensils and equipment, such as blenders, mixers, grinders, slicers, and tenderizers; Bakes, roasts, broils and steams food items to prepare for consumption.
Maintains or supervises maintenance of all kitchen equipment in a sanitary manner.
Directs ordering, delivery, storage and appropriate utilization of food and food related supplies.
Utilizes pocket thermometer to test food temperatures.
Keeps thermometers in all refrigerators and maintains the temperature log books.
Utilizes portion control in food presentation and coordinates creative plate presentation with full use of sauces, gravies and garnishes.
Properly receives food and checks against order and invoices.
Transmits invoices to corporate office in a timely manner.
Utilizes day date system for all perishable foods.
Supervises, motivates, trains and disciplines employees in their department effectively.
Coordinates work of the department with work of other departments.
Coordinates, attends and participates in scheduled in-service programs, staff meetings and department head meetings.
Keeps meeting minutes as required.
Assists in developing departmental policies and procedures to promote stability and productivity.
Maintains record and reports as required.
Supervises all ware washing activities to insure clean, safe and sanitary utensils, glassware, plates and pots.
Checks water temperatures and chemical levels for dishwashers and pot sinks.
Participates in department budget planning and properly tracks supply usage by department to identify waste.
Orders supplies for department including replacements for tableware, flatware, glassware, table clothes, napkins and other kitchenware items as needed.
Butchers and breaks down poultry, meat, fish, etc.
as needed and restores prepped foods in a timely fashion to protect time, safety temperature zone.
Supervises and works with dining room supervisors to ensure New York State Department of Health regulations are met.
Thinks and acts calmly and logically to meet unusual occurrences of the job without being thrown off stride.
Performs any miscellaneous as may be required to include but not limited to holiday parties and catering meetings.
Completes performance reviews of all food service/dietary employees in a timely manner.
Prepares necessary work schedules and ensures proper staffing levels are met at all times.
Is conscientious of over time.
Coordinates with other administrative staff, list and charting of residents dietary needs to ensure New York State Department of Health regulations are met.
Maintains card catalog file to affect this.
Records all diet changes as requested and posts diets in dining room for staff to see.
Works with dining room staff to ensure that all residents are served in an acceptable and professional manner.
Promotes corporate and community policies and procedures.
Investigates and resolves all grievances appropriately and timely.
Inspects kitchen, dining room, receiving and storage areas on an on-going basis to ensure and maintain safe and sanitary conditions.
Attends and participates in weekly team meetings.
